Alfalfa (Medicago sativa) first recorded mention of alfalfa was written in China in 2939b.c. It is grown for fodder and contains unusually high amounts of vitamins U,D,K,A, and E. It also posesses 8 special enimes for good digestion: lipase, a fat burner; amylase which acts on starches;coagulase which clots blood;emulsin which acts on sugars; invertase which changes cane sugars to dextrose;peroxidase which has an oxidizing effect on the blood;pectinase which forms vegetable jelly from pectin; and protease which digests protiens. Drunk as a tea daily it improves appetite, aids in the cure of peptic ulcers, flushes the kidneys, and aids in bowel regulation. It also contains lots of lime and phosphorous. It can relieve dropsey, helps narcotic addicts and alcoholics kick the habits. The sprouts are delicious and contain more protien than wheat and corn.
